Easy Speedy Spinach and Bean Pasta

First of all some big news, I’m pregnant with my first child!

As you can imagine I’m beyond happy, excited and grateful. It hasn’t been an easy journey to get here; I’ll share my story with you one day once my baby girl is delivered safe and sound in late March.

Here’s a pic taken at the high definition scan a couple of weeks ago, just look at that cute little ski jump nose! Oh dear, I’m already turning into a gushing mother.

I’m 23 weeks or 5 months pregnant so just under 4 months to go, eek! The first four months were very difficult as I felt nauseous and drained most of the time, not ideal when you’re starting a food related business.

I also had (and still have) an insatiable appetite, often suddenly realising I-NEED-TO-EAT-SOMETHING-NOW! Do you ever get that?

This week I’m sharing my go to pasta dish when I’m tired, hungry and have to eat something within the next ten minutes. It’s so quick and easy you’ll be turning to it every time you arrive home exhausted and ravenous. It’s also perfect if your little one will only eat pasta.

Easy Speedy Spinach and Bean Pasta

Ingredients

  • pasta (preferably whole-wheat)
  • spinach
  • courgette/zucchini
  • white beans e.g. cannellini, butter beans or navy beans.
  • pesto

Method

  • Put pasta on to boil.
  • Whilst pasta is cooking grate courgette/zucchini, rinse the beans, add spinach to colander.
  • Once the pasta is cooked pour the pasta into colander to drain off the cooking water. This will wilt the spinach.
  • Transfer pasta and spinach back to cooking pot, add beans and pesto. Stir together and enjoy while hot.
  • You can top this with shaved parmesan or nutritional yeast.

Note: if you want to use frozen spinach then just throw it in the pan with the pasta, it will defrost and cook there.
